Preheat your oven at 200 degrees C.
Quarter the figs but don’t cut them all the way through so the segments remain attached at the stem.
Place the figs on a lightly greased ovenproof dish. Don’t worry if they are not fully open, they will soften while baking.
Pick the leaves off the rosemary and chop coarsely
Cut the goat’s cheese in 4 slices about 1 cm thick (about 25 g per person) and place a slice at the center of each fig.
Sprinkle the figs with the rosemary and some pepper. Add one teaspoon of honey on each and top with almonds.
Bake in the oven for 10 minutes, or until the almonds and cheese are nicely browned.
Roasted figs with honey, goat’s cheese and almonds

I love figs. I love figs and cheese even more. Once you encounter the first mouthful of this sensual combination, you will understand its irresistible appeal. All your attention will be captured by the seductive softness of the figs rounded by creamy, flavourful cheese, honey and fragrant rosemary. At the end of your bite, the almonds crunching under your teeth will scream for the next one... and the next...
Ingredients:
4 ripe figs
100 g flavoured and slightly creamy goat’s cheese, such as a Bosworth ash or a Bosworth leaf
4 teaspoons honey
4 teaspoons (20 g) sliced almonds
1 sprig of rosemary
Pepper to taste
Figs are also excellent served with cheese after dinner or wrapped in parma ham as a starter. Keep eating this lovely fruit during their short season (Sep-Oct). They are rich in potassium and fibers, which is excellent for your blood pressure and digestive system.
